Indian summer popsicles

It’s fall! Officially, that is. We’re still enjoying very summery weather here in Los Angeles, and probably will be through October. Which means we have many more weeks of popsicle season left. Poor us.

We thought up this yummy recipe for a sweet treat that’s loaded with good stuff for kiddos and uses some decidedly fall ingredients. Your kids will love them (especially toddlers!) and you’ll feel great knowing their afternoon snack has protein, vitamins, and um, beets!

You do need a juicer and blender for this recipe. But if you don’t have one, you could always pop over to a juice bar and ask them to make you this mixture. Shouldn’t be a problem since there seems to be a juice bar on every corner these days. And apple-beet-ginger is always a delicious combo.

Juice 3-4 beets, 3-4 apples, and a teensy bit of ginger. Or a bit more depending on your kiddo’s tolerance for spice. Blend the juice with a few small scoops of greek yogurt (we love Strauss organic whole milk), and a few tablespoons of honey. Taste and adjust the ingredients as needed.

Pour the mixture into a popsicle mold or paper cups and proceed how you normally make popsicles. The mold above has a nifty lid with holes for sticks, but if you want the sticks to end up straight in the popsicles, it’s a good idea to reposition them a few hours after the pops are in the freezer, once the juice has started to harden.

It is absolutely *not* recommended to let your kids eat these in the house… as evidenced by the photo below.
